Fruit and Oatmeal Breakfast Bake

1 cup old-fashioned rolled oats
1/4 cup sliced almonds
1/2 tsp. baking powder
1 tsp. ground cinnamon
Pinch of salt
1/4 cup Agave
1 cup milk 
1 large egg, lightly beaten
2 tbsp. butter, melted and cooled
1 tsp. vanilla extract
3 ripe bananas, peeled and sliced
1 cup frozen mixed berries


1. Preheat the oven to 375F.
2. Spray a 2-quart baking dish with cooking spray. In a medium bowl, mix the oats, half of the almonds, baking powder, cinnamon, and salt. Stir to combine. In a bowl, combine the agave, milk, egg, butter, and vanilla.
3. Spread the  bananas in a single layer over the bottom of the baking dish. Top with half of the berries. Sprinkle the dry oat mixture over the fruit in an even layer. Pour the liquid ingredients evenly over the oats.
4. Sprinkle the remaining almonds and berries over the top. Bake for 35-40 minutes, until the top is browned and the oats have set. Let cool 10 minutes before serving.

I made this the night before, let it cool, and refrigerated it.  Then cut a piece and warmed it in the mircrowave for breakfast.

  1. This looks so good! Do you think you could substitute honey for the agave? It's about the only ingredient I don't have.

    Wow...This looks delicious! I just heard of baked oatmeal a few weeks ago and my niece is feeding it to her two year old. I love the addition of the fruit...especially, with so many fruits in season right now!
